Caramel Apple Spice Cupcakes

I love the drink with the same name from a certain coffee place but I rarely go there since I don't drink coffee. However, I will splurge every once in a while. I found a recipe on Pinterest so I could make the drink at home, so I had caramel sauce, nutmeg, cloves and cinnamon in the cabinet. As usual I don't have much time in the kitchen with two hungry little monsters so it has been sitting there for over a week...

Yesterday my TO DO List contained one important task : Make desserts for the Thanksgiving Meal on Tuesday Night.

I had planned on making rice crispy treats drizzled with chocolate, a layered jello whip and cupcakes. However, I didn't want to make plain boring cupcakes. I want to spice them up a little bit. I called my mom and looked online. I had a few different cake mixes in the cabinet plus some random ingredients. I found a recipe for applesauce cake and started tweaking my idea.

I took a white cake mix and mixed it per directions using whole eggs. I then added 1/2 tsp of nutmeg, 1/2 teaspoon of cinnamon and one cup of applesauce. It was enough for 2 dozen mini cupcakes and 20 full size cupcakes. Once they were done baking, I used a fork to poke holes in the top of the cupcakes and poured a little caramel sauce on top. I then used vanilla cream cookie icing to top them off. I had some taste testers and they all said they were AMAZING !!!

Jason wouldn't sleep last night, so I took in back in the kitchen with me to finish frosting the cupcakes and keep him from waking Sammy. He might have taste-tested a couple mini cupcakes for me as well ! He kept signing "more" so they must be good.
